Ingredients

  • 3 cups rotisserie chicken, shredded
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 2 cups chicken broth
  • 2 tbsp butter
  • 1 can refrigerated biscuit dough (8-count can)
  • 1 tsp fresh thyme or dried thyme

Instructions

    Melt butter in a 12-inch skillet over medium heat, about 1 minute.

    Add frozen vegetables and sauté 2 minutes until starting to soften.

    Pour in broth and chicken. Stir in thyme and a pinch each of salt and pepper. Bring to a simmer.

    Separate biscuits and lay them on top of the simmering liquid, spacing them slightly apart.

    Cover skillet and cook 6–7 minutes until biscuits are golden and cooked through.

    Remove from heat and let sit 1 minute uncovered. Serve hot.
