Ingredients
- ½ lb pork tenderloin or pork loin, sliced thin
- 8 oz ramen noodles (2 packages)
- 3 tbsp white miso paste
- 1 tbsp fresh ginger, grated or minced
- 1 tbsp soy sauce
- 2 whole eggs

Bring a large pot of salted water to a boil. Add ramen noodles and cook 3 minutes, then remove with a slotted spoon, reserving the water.

Add eggs to the same water and simmer 6 minutes for soft-boiled. Transfer to ice water, then peel and halve.

While eggs cook, heat 1 tbsp oil in a skillet over medium-high. Sear pork 60 seconds per side, until edges turn white. Season with salt and pepper.

Pour 4 cups of the reserved pasta water into the pot. Whisk in miso, ginger, and soy sauce until smooth, then simmer 1 minute.

Divide noodles between two bowls. Pour broth over noodles, then top each with pork slices and soft-boiled egg halves.
