Ingredients
- 6 oz pork belly, thick-cut bacon, or rotisserie pork
- 3 tbsp miso paste (white or red)
- 4 cups chicken or pork broth
- 7 oz fresh ramen noodles
- 2 whole eggs
- 2 tbsp scallions, sliced

Bring broth to a simmer in a large pot over medium-high heat, about 2 minutes.

Whisk miso paste with 2 tbsp warm broth in a bowl until smooth, then stir into the pot.

Add ramen noodles and cook until tender, about 3 minutes, stirring occasionally.

Slice pork belly or bacon into 1/4-inch pieces and add to the broth, simmering 1 minute.
