Ingredients

  • 8 cups beef broth
  • 1 lb beef sirloin or eye of round, very thinly sliced
  • 8 oz rice noodles (dried, about 1/8-inch wide)
  • 2 tbsp fish sauce
  • 2 tbsp fresh ginger, sliced into thin coins
  • 1 cup fresh herbs (Thai basil, cilantro, or mint), chopped

Instructions

    Bring beef broth and ginger to a rolling boil in a large pot over high heat, about 5 minutes.

    While broth heats, place rice noodles in a bowl and cover with boiling water from a kettle, let sit 4 minutes until tender. Drain well.

    Stir fish sauce into the boiling broth, taste, and adjust to your preference.

    Divide noodles among four bowls, then top each with a handful of thin raw beef slices.
