Ingredients

  • 1.25 lb cod fillets, skin removed, cut into 1-inch chunks
  • 2 cups frozen diced potatoes
  • 1 cup heavy cream
  • 2 cups fish or vegetable stock
  • 4 slices bacon, chopped
  • 3 sprigs thyme sprigs (or 1 tsp dried)

Instructions

    Cook bacon in a heavy pot over medium-high until crispy, about 4 minutes.

    Add frozen potatoes and thyme; stir for 1 minute until fragrant.

    Pour in stock and bring to a boil, stirring occasionally, about 3 minutes.

    Gently stir in cod chunks and cream; simmer 3 minutes until fish is opaque throughout.
