Ingredients
- 1 cup red lentils, rinsed
- 1 medium yellow onion, diced
- 4 cups vegetable broth
- 1 whole lemon
- ½ tsp smoked paprika
- ¼ tsp red pepper flakes (optional)

Heat 1 tbsp olive oil in a large pot over medium-high heat for 1 minute.

Add diced onion and cook, stirring occasionally, until softened and just starting to brown, about 4 minutes.

Pour in vegetable broth and rinsed lentils, then stir in paprika and red pepper flakes.

Bring to a boil, then reduce heat and simmer uncovered until lentils completely break down, about 8 minutes.
