Ingredients

  • 1 cup red lentils, rinsed
  • 1 medium yellow onion, diced
  • 4 cups vegetable broth
  • 1 whole lemon
  • ½ tsp smoked paprika
  • ¼ tsp red pepper flakes (optional)

Instructions

    Heat 1 tbsp olive oil in a large pot over medium-high heat for 1 minute.

    Add diced onion and cook, stirring occasionally, until softened and just starting to brown, about 4 minutes.

    Pour in vegetable broth and rinsed lentils, then stir in paprika and red pepper flakes.

    Bring to a boil, then reduce heat and simmer uncovered until lentils completely break down, about 8 minutes.

    Squeeze half the lemon juice into the pot and stir. Taste and adjust seasoning with salt and pepper.

    Serve hot. Drizzle with olive oil and garnish with lemon wedges.
