Ingredients

  • 200 g paneer, crumbled
  • 2 tbsp all-purpose flour
  • 1 cup granulated sugar
  • 6 whole green cardamom pods, crushed
  • 1 tsp rose water
  • 2 cups milk
  • 2 tbsp pistachios, roughly chopped

Instructions

  1. 1

Combine paneer and flour in a bowl, then knead until smooth and pliable, ~1 minute.

  2. 2

Roll mixture into 12 balls (walnut-sized). Keep them on a plate; don't compress.

  3. 3

Pour milk into a medium saucepan and bring to a boil over medium heat, ~3 minutes.

  4. 4

Add sugar and crushed cardamom to boiling milk, stir until sugar dissolves, ~1 minute.

  5. 5

Gently slide paneer balls into simmering syrup; they will sink, then float within 2–3 minutes.

  6. 6

Remove from heat, stir in rose water, then chill in the fridge or serve warm. Top with pistachios.
