Ingredients

  • 4 cups chicken broth
  • 4 oz rice noodles (banh pho)
  • 1.5 cups rotisserie chicken, shredded
  • 2 tbsp fish sauce
  • 1 whole fresh lime (juiced)
  • ½ cup fresh herbs (basil, cilantro, mint), chopped
  • 2 stalks green onion, sliced thin

Instructions

    Bring broth to a rolling boil in a medium pot.

    Add rice noodles and cook until tender, about 4 minutes. Stir occasionally so they don't clump.

    Add shredded chicken and fish sauce, stir, and heat through for 1 minute until steaming.

    Divide noodles and broth between 2 bowls. Squeeze fresh lime juice over each.
