Abalone Congee

Ingredients

  • 1 can (8 oz) canned abalone, drained
  • 1.5 cups cooked white rice
  • 4 cups chicken or seafood broth
  • 1 tbsp fresh ginger, julienned
  • 1 tbsp sesame oil
  • 1 piece scallion, sliced thin

Instructions

    Bring broth to a boil in a medium pot over high heat, about 2 minutes.

    Add rice and ginger, stir, then reduce heat to medium-low and simmer 5 minutes.

    Slice abalone into bite-sized pieces, then add to the pot and stir gently.

    Simmer 2 more minutes until abalone is warm and rice is creamy, stirring once.

    Divide between bowls, drizzle each with sesame oil, and scatter scallion on top.
