Ingredients
- 3 salmon fillets (about 6 oz each)
- 2 medium potatoes
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 ½ teaspoon salt
- 1 ½ teaspoon black pepper
- 1 ½ teaspoon dried thyme or Italian seasoning
- 1 ½ teaspoon paprika
- 1 tbsp lemon juice (optional)
- 1 tbsp chopped parsley (optional)

Turn the oven on and heat it to 400°F (200°C).

Place a sheet of parchment paper on a baking tray.

Wash the 2 potatoes and slice them into very thin round slices.

In a bowl, add the potato slices, 1 tablespoon olive oil, salt, pepper, garlic, and thyme. Mix everything so the potatoes are lightly coated.

Place the salmon fillets on the baking tray.

Drizzle the remaining 1 tablespoon olive oil over the salmon

Sprinkle a little salt, pepper, and paprika over the salmon.

Lay the potato slices on top of each salmon fillet, slightly overlapping them like small scales.

Press the potatoes down gently so they stick to the fish.

Place the tray in the oven and bake for 20–25 minutes until the salmon is cooked and the potatoes turn golden.

If you want the potatoes extra crispy, switch the oven to broil for 2–3 minutes at the end.
