Ingredients

  • 2 cups heavy cream
  • 5 egg yolks
  • 1 ½ cup sugar
  • 1 tsp vanilla extract
  • 1 Extra sugar for caramelizing

Instructions

    Preheat oven to 325°F (160°C).

    Heat heavy cream in a saucepan until warm but not boiling.

    In a bowl whisk egg yolks and sugar until pale.

    Slowly pour warm cream into the egg mixture while whisking.

    Add vanilla and mix.

    Pour the custard into ramekins.

    Place ramekins in a baking dish.

    Fill the dish with hot water halfway up the sides.

    Bake for 35–40 minutes until the custard is set.

    Cool completely and refrigerate for 2 hours.

    Sprinkle sugar evenly on top.

    Use a kitchen torch to melt and caramelize the sugar until golden.

    Let the sugar harden for a minute before serving.
