Ingredients

  • 6 oz boneless skinless chicken breast, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp buffalo sauce
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¾ cup dry penne pasta
  • ½ cup shredded cheddar cheese
  • 2 tbsp shredded mozzarella cheese
  • 1 tbsp butter
  • 2 tbsp milk or cream
  • 1 Salt and black pepper to taste
  • ½ cucumber, sliced lengthwise into spears (optional)

Instructions

  1. 1

Bring a small pot of salted water to a boil. Add the penne pasta and cook according to package instructions, usually about 9 to 11 minutes, until tender but still slightly firm. Drain and set aside.

  2. 2

While the pasta cooks, preheat the oven to 400°F (200°C). Line a small baking sheet with parchment paper or lightly grease it.

  3. 3

In a bowl, combine the chicken pieces with olive oil, buffalo sauce, garlic powder, paprika, salt, and black pepper. Toss until all the chicken is evenly coated in the seasoning mixture.

  4. 4

Spread the chicken pieces in a single layer on the prepared baking sheet. Roast in the oven for about 12 to 15 minutes, turning once halfway through, until the chicken is cooked through and lightly browned on the edges.

  5. 5

In a small baking dish or oven-safe pan, combine the cooked penne pasta with butter, milk, cheddar cheese, and mozzarella. Stir until the pasta is coated in the cheese mixture.

  6. 6

Place the pasta dish in the oven for about 5 minutes until the cheese melts and becomes slightly bubbly. The top may develop light golden spots.

  7. 7

Remove both the chicken and pasta from the oven. Stir the pasta once to create a creamy texture.

  8. 8

Slice the cucumber into long spears for a fresh, crisp side.

  9. 9

Plate the meal by placing the cheesy penne on one side of the plate, the roasted buffalo chicken bites next to it, and the cucumber spears alongside for a refreshing contrast.

  10. 10

Serve immediately while the chicken and pasta are warm.
