Ahi Tuna Poke Bowl with Avocado and Cucumber

This fresh ahi tuna poke bowl is a simple Hawaiian-inspired dish made with warm sushi rice and topped with creamy avocado slices, crisp cucumber, and cubes of sushi-grade ahi tuna. The tuna is lightly seasoned and paired with furikake seasoning, sesame seeds, and seaweed flakes which add a savory, slightly salty umami flavor. The combination of textures makes the bowl refreshing and balanced: soft rice on the bottom, buttery avocado, cool crunchy cucumber, and tender tuna on top.

Ingredients

  • 1 cup cooked sushi rice
  • 4 oz sushi-grade ahi tuna, cut into small cubes
  • ½ avocado, sliced
  • ½ cup cucumber, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp furikake seasoning
  • 1 tsp sesame seeds
  • 1 tbsp chopped nori (seaweed flakes) Optional vegetables (such as shredded carrots, edamame, radish, mango, or green onions)

Instructions

  1. 1

Cook 1 cup sushi rice according to the package directions if it is not already prepared. Once cooked, place the warm rice into a serving bowl and gently spread it out to form the base of the bowl.

  2. 2

Cut 4 ounces sushi-grade ahi tuna into small bite-sized cubes using a sharp knife. Place the tuna pieces into a small bowl.

  3. 3

Add 1 tablespoon soy sauce, 1 teaspoon sesame oil, and 1 teaspoon rice vinegar to the tuna cubes. Stir gently so the tuna becomes lightly coated in the seasoning.

  4. 4

Slice 1/2 avocado into thin slices and set it aside.

  5. 5

Thinly slice 1/2 cup cucumber into small round slices.

  6. 6

Place the sliced avocado on one side of the rice in the bowl.

  7. 7

Place the cucumber slices next to the avocado so they cover another section of the rice.

  8. 8

Spoon the seasoned tuna cubes you prepared earlier into the bowl next to the avocado and cucumber.

  9. 9

Sprinkle 1 teaspoon furikake seasoning, 1 teaspoon sesame seeds, and 1 tablespoon chopped nori flakes evenly across the top of the bowl.

  10. 10

Add any optional vegetables listed in the ingredients on top of the bowl if you want extra flavor or texture.

  11. 11

Serve immediately while the rice is slightly warm and the fish is fresh. Mix everything together in the bowl before eating so the flavors combine evenly.
